현장에 적용해 보고 현장에서 실질적으로 요구되는 능력과 자질을 학생 스스로 발견하게 한다.
이를 통해 단체급식 분야에서의 전문가적 자질을 강화하고 실습 후 고용의 기회를 마련하여 취업 시 경력을 인정받는 기회를 마련한다.
